Sommeliers’ Exchange: Placing Sparkling Wine into Yum Cha Culture
– with Prosecco & Dim Sum Food Pairing Exercise
Although tea is traditionally the beverage choice for dim sum, wines, especially sparkling wines, can bring an exciting experience to customers (as well as revenue to the restaurant!). Among global sparkling wines, Prosecco DOC’s generous fruit flavour profile, balanced acidity, and palate-refreshing effects are a great companion during yum cha. In this workshop, award-winning sommelier Reeze Choi will explore how to utilise Prosecco DOC in your wine list through an interactive food-pairing exercise, as well as providing key facts and points of interest to entice your guests.
Sommeliers of all levels of experience are welcome and will be offered a free seat in one of our WSET Level 1 Awards in Wine certificate course (examination fee excluded) as a bonus offer to support the F&B industry.

Mr. Reeze Choi 蔡淦烽先生
Reeze Choi worked at prestigious restaurants such as L’atelier de Joël Robuchon Hong Kong and Upper Modern Bistro. He is now the founder of a sommelier services and wine consultancy company, Somm’s Philosophy. He finished in the 16th of the 2019 Best Sommelier of the World Competition, and in the 1st runner-up of A.S.I. Asia-Oceania Best Sommelier Competition 2018. He also held the Championship of The Best Sommelier Greater China in 2016 and 2017.
